In 1905 Ludwig Roselius of the Kaffee Handels Aktien Gesellschaft (HAG) in Bremen devised the first caffeine elimination process. Roselius' father was a coffee taster, and his son Ludwig, concerned about his father's massive caffeine intake, devised a system that allowed him to make a coffee that contained little caffeine while keeping all the beneficial qualities of the beverage intact. Caffè HAG was introduced to the Italian market in 1920. Since then the process has improved significantly and is now able to extract the caffeine almost completely, leaving the unmistakable aroma of the coffee intact.

Caffè Hag is natural decaffeinated coffee, the result of experience, art, technique and rigorous selection of the finest coffees. Decaffeinated because it contains less than 0.1 percent caffeine and natural because it uses a highly selective process that eliminates caffeine through carbon dioxide, the same element also present in nature, in the form of bubbles, in some spring waters.
